Mead is a traditional product that has long suffered from defects in its processing, being often oxidized, turbid, heavy. For this reason, Alexandre Sintes created « Hydromels du Sud », which transfers the technology of wine processing to the conversion of honey into high quality meads. His caves are located twenty kilometers away from Montpellier in a small village next to the Pic Saint Loup Mountain. Apiarist, Alexandre Sintes raises 320 colonies of honey bees all over the Languedoc Roussillon region, and transforms his own honey into oenological meads named “Clos des Sentinelles”. The Development of high quality Meads is performed in collaboration with experienced and skilled œnologists and engineers. Thus, Natoli & Co assembled fine meads from different honeys, by adapting the traditional knowledge of French wineries. From his experience, “Hydromels du Sud”proposes to apiarists to assemble their own meads.
